Spring is nature’s way of waking up from sleepy hibernation, and don’t we all need to shake ourselves awake from cosy winter repose? Colour-bursts of new life in the Lake District and Lancashire showcase the vibrant hue of deep-pile carpets of bluebells, Wordsworth’s beloved sun-glow daffodils and fresh green of woodlands putting on their new clothes.
In their quest to taste and treasure the best cheeses that Lancashire has to offer, Lancaster House Head Chef, Damian Ng, and Food & Beverage Manager, Gary Tennant, spent some time at Grandma Singleton’s dairy, which produces one of the strongest Traditional Lancashire cheeses available, and then at the farm which supplies the milk for their sheep’s cheese.

Taking a few of Damian’s cheese recipes and a determination to find a few new innovate flavours, they called in at the famous Mrs Kirkham’s and Butlers Farmhouse Cheeses.
