The impressive gin library at Waterhead continues to expand as we journey around the globe. This month going down under to explore the rapidly expanding Australian gin market with The Sabre from West Winds Gin.
A Seafaring Heritage
Uniquely Australian, West Winds Gins was the vision of four adventurous Aussies who wanted to create a gin known around the world. With gins named The Cutlass and The Sabre, West Wind Gins pays tribute to the ocean breezes used for centuries by travellers and explorers coming through Europe and South Africa to the west coast of Australia.
West Winds burst on to the gin stage in 2011 when they submitted two of their gins in the San Francisco International Spirits Competition, winning Double Gold and Gold awards respectively. Clearly these were artisan distillers worthy of attention. They have gone on to win a plethora of national and international awards since.
Flavour of Australia
Using distinctly Australian botanical such as orris root and wattle seeds as well as the more traditional flavours of juniper, lemon and limes, The Sabre is a London Dry gin bottled at 40% ABV. It is a classic gin led by a citrus taste trying to express the flavour and flare of Australia.

Juniper, lemons, limes, orris root, angelica, coriander seed, coriander root, wattle seed, cinnamon myrtle, lemon myrtle, liquorice root, allspice
The Sabre’s Tasting notes
- Nose: Bright, aromatic with an attractive freshness.
- Palate: Fresh, and balanced with an undercurrent of citrus followed by classic coriander seed,
- Finish: Very smooth and refined, the addition of wattle seed adds depth and introduces a creamy texture.
The perfect Sabre and Tonic
Always remember it’s a G&T not a T&G, so use lots of ice and keep it 3:1 tonic to gin.
Measure of Sabre over ice, topped with Fever-Tree tonic, and garnish with lemon, as it cuts the sweetness of the tonic and balances the drink.
