Following on from Anthony’s introduction to Waterhead’s premium range of Gins, his choice for November’s Gin of the Month is, No. 3 London Dry Gin.
With juniper at its heart, No. 3 captures and brings out the character of a traditional London Dry Gin. It is also considered the perfect gin for a Dry Martini cocktail. The name hails from No. 3 St. James Street, London, the home of Berry Bros & Rudd since 1968, creators of London Dry Gin and London’s oldest wine and spirits merchant. The ‘Parlour’ remains almost intact to this day – a room where for 220 years the Berry partners came together to eat and discuss business. Many great drinks originated around the Parlour’s dining table. The key on the bottle was inspired by the key to the Parlour door.
The current chairman of the family-run company is the latest of eight generations of the Berry family to have worked in the business. Berry’s first supplied wine to the British Royal Family during Kind Georges III’s reign and today is the holder of two Royal Warrants for H.M. The Queen and H.RH. The Prince of Wales.
The recipe for No.3 London Dry Gin uses only three fruits and three spices, ‘the botanicals’, which are the essential ingredients giving the gin its flavour. Juniper from Italy lends the taste of pine and lavender, Sweet Spanish orange peel gives a freshness and grapefruit peel a zesty lift. For the spice content Angelica root provides an earthy quality, Moroccan coriander seeds give a lemon flavour and a spicy somewhat slightly peppery finish and then finally cardamom pods which add extra spice, aromatic but with a warm bite.
The Distillation Process
Being able to distill the finest gin takes a high level of skill and years of experience. The Master Distiller, working closely with the creator Dr. Clutton, insists in supervising every batch of No.3 Gin.
No.3 Gin is the only London Dry Gin that is distilled to its own proprietary recipe, and is made using small traditional pot stills. The botanicals are weighed out and placed in a clean, copper pot still. Pure grain alcohol is diluted with demineralised water and added to the botanicals. This is gently stirred and then left to steep overnight, allowing full extraction of the essential oils from the botanical ingredients.
Distillations begins the next morning. First the pot still is heated, turning the liquid to vapour before condensing back to liquid form. After a resting period and further filtration, the gin is diluted to a strength of 46% alcohol by volume, before being bottled.
Nose: Bright, crisp and fresh with an uplifting welcome of juniper.
Palate: Juniper to the fore, supported by floral notes and spicy, warm cardamom. Plenty of citrus ‘zing’ complemented by the gingery spiciness of coriander.
Finish: The earthy dryness of angelica kicks in
Fill a large glass full of ice, place a couple wedges of lemon into the glass and pour your measure of No.3 London Dry Gin then stir allowing the gin to mix with the ice and lemon. Finally add tonic water to complete the classic Gin and Tonic.
